Gluten Free Flour

The base of this recipe is the gluten-free, all-purpose, measure-for-measure flour. I use King Arthur gluten-free, measure-for-measure flour. This blend is easy to obtain, and it gives a great final product. If you do not use the same gluten-free flour blend, be sure to check your ingredient panel on the packaging. If it does not contain xanthan gum, you will want to add some. I suggest adding 1/2 tsp. Xanthan gum for this recipe.

Non-dairy Milk

The non-dairy milk used in this recipe is Califia Farms, Better Half. It is a yummy coconut cream, almond milk blend. This blended non-dairy half & half has a very creamy consistency and just a hint of coconut taste. This recipe will work with any non-dairy milk. However, to maintain the traditional look of a buttermilk pancake, it would be best to use a white non-dairy milk.

When the non-dairy milk is mixed with lemon juice, it creates a form of non-dairy buttermilk. This is what gives the Fluffy Buttermilk Pancakes that unmistakable and delicious tang.

Golden Ground Flax / Egg Replacement

The gluten, dairy, and egg-free Buttermilk Pancakes recipe needs a binder. That being the case, since eggs have been omitted, ground flax and water have been substituted. Flax has the ability to add strength (binding structure) and flexibility to a recipe. Also, the flax I use has a lovely golden color, and after mixing with water, it actually resembles real, beaten eggs.

Because ground flax will keep for several months in your freezer, it is a great choice for use as an egg substitute. Making ground flax eggs is very easy.

For example, for every egg in a recipe, you will mix 1 tablespoon of ground flax with 3 tablespoons of water. Stir with a small whisk. At first, the ground flax and water blend will be very thin. Set it aside. In 3-5 minutes, it will be thicker and ready to add to your recipe.

Now, flax (ground or seeds) isn’t just a binder. It is really somewhat of a super food. Because flax is full of omega-3 fatty acids, protein, and fiber, it is good for your heart, digestive health, and weight control. Also, there is some evidence indicating flax could aid in cancer prevention. So, go ahead, add flax where it is appropriate in your diet. It can easily be added to your oatmeal, cookies, brownies, smoothies, etc.

Vegetable Oil

Vegetable oil is used as the fat in this GF, DF, EF recipe. However, you can substitute any mild-flavored oil (like sunflower oil) or melted, dairy-free butter.

Flavoring

Vanilla gives the Buttermilk Pancakes an aromatic and sweet, full-bodied flavor. The recipe calls for 1-2 tablespoons. You can play with this amount, but you won’t be sorry if you add the full 2 tablespoons.

Fluffy Buttermilk Pancakes

Before beginning, check the ingredient list to be sure each one meets the criteria for your specific diet. Everyone's dietary restrictions are unique. Please be safe and only include items that work for your health.

  1. MEASURE OUT ALL INGREDIENTS

    It is my practice to measure out all my ingredients before I begin mixing.  I highly recommend it.  I have found I am far more likely not to miss any ingredients this way.  It also keeps the flow of mixing ingredients more steady.

    When measuring gluten-free flour, it is best to use the spoon and level method. Spoon the flour into the measuring cup. Then use the back of a table knife to level the four off.  You can also use a food scale to weigh the flour.  You will need to check your packaging to find out the standard weight for your flour.  Each manufacturer's standard will be different.

    If your flour blend does not contain xanthan gum, you will want to add this. I recommend using 1/2 teaspoon for this recipe.
  2. MAKE THE FLAX EGG SUBSTITUTE

    Place the 2 tablespoons of ground flax in a small bowl or glass measuring cup. Using a small whisk, add the 6 tablespoons of water.  Whisk until smooth.  Set aside.

    At first, the flax and water will be very runny and thin. It will thicken up and be ready to use after about 5 minutes.
  3. MAKE THE BUTTERMILK

    Using a large two-cup measure cup (or other small bowl/pitcher), measure your 2 cups of non-dairy half and half.  Add in the lemon juice.  Stir with a small whisk.  Set this aside.

  4. MIX THE DRY INGREDIENTS

    In a large mixing bowl, using a whisk, blend the gluten-free flour, baking powder, granulated sugar, and salt. 

  5. BLENDING THE DRY INGREDIENTS WITH REMAINING INGREDIENTS

    Use a large whisk or spoon-spatula, blend the flax (egg substitute), the buttermilk (non-dairy creamer mixed with the lemon juice), the vanilla, and the vegetable oil.  Mix until all ingredients are combined.  Let this rest and do not stir again.

  6. PREPARE THE GRIDDLE

    Heat your electric griddle to 350 degrees F.  If using a stove-top griddle, heat on medium.  Your griddle is ready when a small amount of water dropped on the surface sizzles.  A well-seasoned griddle will not require much (if any) coconut oil on the surface to keep pancakes from sticking.  I usually use a nylon spatula to spread a thin layer on the surface for the first round of pancakes.

  7. MAKE THE PANCAKES

    Use the ladle to scoop the pancake batter.  The average ladle holds about 1/2 cup of batter.  Pour the batter onto the hot griddle.  The pancake will spread.  Cook the pancake for about 2-3 minutes.  The pancake will be ready to flip when it loses its gloss, and the edges begin to look dry.  You will see some holes develop on the top.  However, gluten-free pancakes will not get as many holes as a pancake made with wheat flour. Flip and cook the pancake an additional 2-2-1/2 minutes. Remove to a cooling rack or platter.

  8. STORAGE

    Buttermilk Pancakes can be stored in the refrigerator for up to 5 days.  Beyond that, wrap 2-3 pancakes together in plastic wrap. Place each bundle in a freezer-safe zip bag and freeze for up to 3 months.  

  9. SERVING SUGGESTIONS

    Serve these gluten, dairy, and egg-free Buttermilk Pancakes hot with non-dairy butter and syrup or honey. Fruit is always a welcome addition to Buttermilk Pancakes. You might even try them with and non-dairy whipped cream.  Sure, why not? Add some non-dairy sprinkles!

If you do not need a dairy free alternative, this recipe can be made with regular milk. Also, if you have no issue with eggs, you can also substitute the 2 eggs back in. If you do use eggs you will omit the 6 tablespoons of water called for in the recipe.

Can I use any non-dairy milk in the recipe?

Yes, you can use your favorite non-dairy milk in the recipe.  However, just know, the flavor and possibly color of the finished product could be affected by the change.

I don't have dietary issues with eggs; can I use real eggs instead of the ground flax substitute?

Great question? Yes, you can use real eggs in this recipe.  Omit the ground flax and the water for mixing the flax.  Use 2 large eggs.  Give them a good whisk before adding into the recipe.

Have you tested this recipe with any other gluten free flours?

I have tested this recipe with Bob's Red Mill All Purpose Gluten Free Flour. I found the final product to be a bit gritty.

Can I freeze this recipe?

These pancakes actually freeze well.  So, go ahead and make extra for those days when you are running late or you just need to throw together a quick meal. Simply wrap 2-3 fully cooled pancakes in plastic wrap.  Then, drop the wrapped pancakes into a freezer zip-lock bag.  The pancakes can be stored in the freezer for 3 months.  Thaw in the refrigerator and microwave in 15-second intervals for serving.
