The non-dairy milk used in this recipe is Califia Farms, Better Half. It is a yummy coconut cream, almond milk blend. This blended non-dairy half & half has a very creamy consistency and just a hint of coconut taste. This recipe will work with any non-dairy milk. However, to maintain the traditional look of a buttermilk pancake, it would be best to use a white non-dairy milk.
